Korean Beef Bowl

This meal is a family favorite and another that can be served quickly if time is of the essence.

Korean Beef Bowl
PREP TIME: 30 minutes
SERVES: 4
If you have the ability to make this ahead, you can pickle vegetables to add an amazing flavor. Simply cut enough of your choice of vegetables (my favorites are red onion and carrots) to fill a mason jar. Fill with 2 parts vinegar, 1 part water, and a 1/2 teaspoon of salt. Shake vigorously and set in the refrigerator overnight.
INGREDIENTS
1 cup rice, white or brown or cauliflower rice
1 lb ground beef
2 cloves garlic, minced
1/4 cup coconut aminos
4 tsp sesame oil, divided
1/2 tbs grated ginger
1/4 tsp red pepper flakes, or more to flavor
2 tsp sesame seeds, optional
2 green onions, sliced
DIRECTIONS
Cook the rice according to the package's directions.
Cook the ground beef with the garlic over medium-high heat.
While the beef is cooking, combine the coconut aminos, 2 tsp of the sesame oil, ginger, and red pepper flakes in a small bowl.
When beef is finished cooking, add the coconut amino mixture. Bring the contents of the skillet to a simmer until it is heated through.
Serve, topping with remaining sesame oil, sesame seeds, and green onions.
