Simple Stir Fry

With chicken pre-made ahead of time, you can have this delicious and veggie-filled dinner on the table in as little as 30 minutes, start to finish.

Simple Stir Fry
PREP TIME: 5-20 minutes
COOK TIME: 20 minutes
SERVES: 4-6
To make the prep time quicker, pre-prepare the chicken by either preparing it ahead of time or putting breasts in a slow cooker with enough water or chicken broth to cover the bottom of the slow cooker and cooking for 6-8 hours on low, then shredding.
INGREDIENTS
2 cups of chicken, cubed or shredded
2 bags of frozen vegetables, mixed (stir fry packets or any version of family favorites)
sesame oil
1/4 cup coconut aminos or tamari (gluten-free soy sauce)
DIRECTIONS
If chicken has not been pre-prepared, slice into thin strips or cubes and fry in skillet until no longer pink inside.
Set chicken aside.
Add enough sesame oil to cover the bottom of the pan and add in frozen vegetables. Cover with a lid and cook over medium-low heat until vegetables are crisp and warmed.
Add chicken and coconut aminos or tamari. Stir and cover. Simmer until the chicken is warmed through.
