Chocolate Avocado Pudding

You'll never realize this decadent pudding is mostly made out of avocados - and neither will anyone else. It's choco-licious and so filling you can eat a small amount and be satisfied!

Chocolate Avocado Pudding
PREP TIME: 10 minutes
MAKES: 4 servings
INGREDIENTS | DIRECTIONS |
3 avocados, soft | 1. Combine all ingredients except raspberries in a glass bowl or a mixer. Start with 1/4 cup of honey and 1/4 cup of water. |
2/3 cup raw cacao powder | 2. Blend ingredients until a pudding-like consistency is reached. An immersion blender works very well. Add* more honey as needed for taste and more water as needed for consistency. |
1/4-1/2 cup raw honey | 3. Spoon into small dishes and top with fresh raspberries. |
1/4-1/2 cup water | |
1 tsp pure vanilla extract | |
dash sea salt | |
raspberries, for garnish |
Notes from Kristie:
This is a great recipe for chocolate lovers and pudding lovers alike! I sent this to preschool as a birthday treat and the little ones gobbled it up, never realizing they were eating a nutritious and filling substitute of a classic snack.
*I usually use between 1/4 and 1/2 cup of honey and water. It depends on how large the avocados are, so start small and add as needed or the consistency will be too thin.
