No Cook, Nut Butter Cookies

These freezer cookies are quick to make, tasty, filling, and cute to boot!

No Cook, Nut Butter Cookies

PREP TIME: 5-10 minutes
YIELD: 52 mini cookies
INGREDIENTS
  • 1/2 cup raw nut butter

  • 1/4 cup raw honey

  • 1 tsp pure vanilla extract

  • 1/8 tsp sea salt, finely ground

  • 2 cups raw cashews, ground into flour

DIRECTIONS
  1. In a bowl, combine the almond butter, honey, vanilla, and salt. Mix by hand.

  2. Add the cashew flour and mix until you get a firm cookie dough consistency.

  3. Roll the dough into little balls the size of a melon ball.

  4. Flatten the cookies with a fork.

  5. Freeze for a couple of hours. Store in the freezer.
